National Chocolate Week

There has been a little bit of a sugar high at Betta Living HQ this week as the team have put some considerable time and effort into celebrating everyone's favourite guilty pleasure, chocolate.
National Chocolate Week gave us all a very valid excuse to binge ourselves in lots of glorious chocolate with the team's favourite chocolate treat being Nic's Rockier Road.
It was too good not to share so here's the delicious recipe for you to try for yourself:
Ingredients
- 300g of dark/ milk chocolate (Nic uses Galaxy but the choice is yours)
- A splash of Milk
- Raisins
- 200g Rich tea biscuits
- 3 Tbsp. golden syrup
- 100g marshmallow
- A small bag of raisins
- Half a bag of crushed hazelnuts (you can use whole nuts if you prefer)
- Icing sugar to dust
Directions
Melt the chocolate, golden syrup and milk in a large pan over a high heat.
Whilst this is melting crush the rich tea biscuits until crumbs, leaving some large pieces for extra crunch. Place the marshmallow, nuts and raisins into the rich tea crumbs.
When the chocolate has melted place half of the mixture in a bowl and leave to one side. Place all biscuit mixture into the pan of melted chocolate. Stir thoroughly.
Place this mixture into a baking tin and then pour the remaining melted chocolate over the top. Smooth out the chocolate and then refrigerate for a minimum of 2 hours, Nic leaves hers overnight for the best results.
When turning out cut into squares or rectangles and dust with icing sugar.

Other contenders were Barry's Silky Chocolate Pie, Kirsty's Chocolate Biscuit Cake, Katie's Chocolate Orange Brownies and Claire's Mini Chocolate Cheesecakes. As a result this weekend will be spent mostly at the gym!
